The Sommelier’s Notes:
The glass shines with a bright straw yellow. The nose expresses a wonderful bouquet of orange flowers, cedar peel, and fragrant herbaceous notes of Mediterranean scrub. The taste is consistent and expresses a marked freshness, an elegant sapidity and a remarkable persistence.
Food pairing:
Perfect on raw fish, shellfish and shellfish. Easy to pair with sushi, a spaghetti with sea urchins or a traditional fried paranza. It is beautifully expressed with a red shrimp tartare of Mazara del Vallo flavored with wild fennel and EVO oil.
